Buddy of mine gave me a bunch of quail eggs, so I was looking for a good way to use them. Made this up for brunch. Hash brown cups with bacon, cheese, jalapenos, and quail eggs. This was delicious.

Can’t remember ever having quail eggs. Both plates look great but the hamburger steak is right up my alley!
Quail eggs are really good, just small.
I'm laying here with my belly growling. This ain't helping.

Back in the mid nineties I had a friend at work that would bring a gallon jar of pickled quail eggs to work. They were good and wouldn’t last all day. The next day was rough. Everyone in the shop was gassy
The Rookery in Macon has a burger of the month that will have a couple of over easy quail eggs on it. Good.
