My Mom grew some of these in her garden. Apparently called a pink banana winter squash??? I used less than half of it tonight. Cubed squash roasted, onion, garlic and a roasted pablano sweated down with cumin, coriander and chipotle powder. Added some chicken stock and then some heavy cream and simmered for a while. Then hit with the immersion blender. Served with a garden fresh salad with homemade croutons and a slice of Valley Head Bread sourdough topped with gruyere cheese, garlic, red onion and parsley.
