Been suffering with some alpha gal burnout lately…….. no getting around it just what it is. Craving some ribs or a pork chop pretty bad. Getting tired of the same ol same ol so to speak too. Decided to kick up the seafood options this weekend to scratch the itch best I can.
Last night did some pan seared Alaskan cod. Served that over some pumpkin seed risotto along with a butternut-saffron purée. That was roasted butternut squash sweated down with onion, garlic, a touch of nutmeg and then simmered in a little stock and heavy cream with a good helping of saffron. Then liquified in a blender, that was the star of the dish.
Tonight did fried soft shell crab with mushroom risotto and lemon-caper sauce.
