Last Nights Supper

Some friends spent the evening with us last night. Had a great time catching up and stretching out some good food over the course of several hours. Had some toasted Valley Head Bread with some herb butter and a romesco sauce I put together. The romesco is roasted tomato, red pepper, toasted walnuts, garlic, a little vinegar and oil, smoked paprika and salt/pepper put in a blender. Followed up by some roasted shishito peppers with a spicy lemon sauce and romesco. The wife made a salad with some homemade croutons. Final course was pan seared halibut with lobster risotto and a lobster sauce. The sauce was made by sweating down onion, carrots, celery, garlic and herbs. Then added tomato paste and deglazing with brandy. Then added some homemade lobster stock, star anise, and some roux I made prior to. Let that simmer with the vegetables for an hour and then strained. Put back in the pan and simmered with ground lobster shell and then strained again. Finished off by melting butter into the warm sauce. Topped with some cherry tomato confit.
