Got some more trouts with the boys this morning… was gonna ask if you had a good brine/smoke recipe for hatchery rainbows. I’ve got a dynamite one for bigger fish but it’s too daggon salty for smaller fish. View attachment 1302534
They're pretty durn good rubbed with some olive oil, salt, pepper, and stuff a slice of lemon and a slice of onion in the cavity and grill them.
I have a great recipe for some delicious smoked trout dip that I got from @northgeorgiasportsman, I'll post it if I can find it. Or maybe he will.

Trout dip would go fast here… I been piling a few up in the freezer.

I’ve smoked a lot of fish on alder with a 3:1 brown sugar and canning salt dry rub overnight… excellent on larger fatty fish.
