Those are White Crappie with the "ears"...really just a dark spot on the gill

There can be many different regional variations in appearance among the same species. This one in particular would be a great research project for a motivate marine biologist to take on. But freshwater tends to be ignored, unless the subject species is invasive or threatened. Most of the research efforts go towards saltwater, largely because that is where the funding is.
