What to plant now through January for deer/cover crop?

My wheat/brassica plot didn't do as well as I wanted. Deer ate all the wheat and didn't get the rain when needed to keep the brassica growing. Would like to plant something for the deer and double as a winter cover crop. What will germinate and hold up to freezing temps this winter?

I overseed with rye or rye grass this time of year. Any thin or tore up spots in my plots get overseeded mostly with rye grass. Clover will germinate as well as Dykon radish depends on what your trying to achieve i guess.

Golden acorns and protein chips work well during the winter until spring green up also.
