Tex-Mex Goodness

This hit the spot for sure.
Pounded out some big chicken breasts, and marinated them all day in lime juice, olive oil, and my Tex-mex seasoning. Cooked them up in the cast iron grill pan, then put them on a bed of Mexican rice, topped them with blue corn tortilla chips, melted Monterey Jack, and pico de gallo. Yep.

I need to try this. Any other secrets other than what you described?
Naw, it's pretty simple. Make your rice up, put the chicken on it, crumble the chips on it, put the grated cheese on there, and stick the plate in the oven at 350* for a couple minutes to melt the cheese, then put the pico on there and enjoy.
