Shot a couple pigs a month ago and brought backstraps back on the plane. Marinated overnight in Mojo Marinade with some extra lime added. Seared it and into the slow cooker this am. Slow cooker all day, then finished it in the skillet, simmering in the braising liquid. Rice, black beans. Aye, caramba!
