Venison Chops

Most folks call them backstraps, I call them chops. Whatever you call them they are delicious! Lightly fried in olive oil and butter, rare. Deglaze the fry pan with red wine, let it simmer a bit to thicken and pour over the meat. Served with baked red potatoes, salad, and a glass of Merlot. 20240412_200021.jpg

Mighty fine ! And I agree , whatever you want to call them they are delicious . If cooked right I’ve gotten to where I prefer it over a beef steak
