Can't wait to hear how it went. How big of a chunk of beef are you cooking?

I bought a whole brisket and cut the point off and froze it for later and am cooking the flat. It weighs about 6.5 lbs.

Man!!!! this here brisket is mighty good. I cooked it in my smoker in the smoke for 3 hours and in foil for 5 hours. I used no rub or marinade. But I did keep it wet with apple juice while in the smoke. I put apple chunks and sliced onions in the foil with it. I sliced it and had slaw and sweet corn sides and garlic bread. I made some BBQ sauce from a weber grill'n book recipe. I am very pleased with how it turned out.
