I have a 7 lb beef rib roast all seasoned up to spin over a bed of coals on the Big Green egg for Christmas Eve supper.
This was bought at the local Publix on sale for 6.99 a #.

Just finished up with Christmas eve festivities.
The Rib roast came out fantastic!
I don't understand why all the yellow in one pic.
Anyhow, 2 hrs at 270° with pecan chunks for smoke and then rest for about 25 minutes while stoked the fire back to 500 and the a quick sear on all sides then another 20 minute rest before slicing.
Was very good.
