This goes back a ways, all the way to the 4th actually....... The garden is really producing now that we've dried out a little bit, a lot of beans, okra, maters, squash, eggplant and peppers right now. Have been doing some veggie nights quite often. We just got back from a week in Jackson Hole WY, so need to shed a vacation pounds anyhow.
Starting from most recent to the oldest, I had a cravin for some Cajun flavors this weekend. Last night I blackened some catfish and served over some fried green tomatoes with an Andouille cream sauce. Tonight, did a take off of both a sauce piquant and okra creole. Made a little shrimp stock with some shells. Sweated down some onion, celery, banana and jalapeno pepper and garlic with some diced Andouille. Added some bay leaves, okra, fresh chopped tomatoes, a ton of fresh herbs, some of the shrimp stock and a couple dashes of w'shire and hot sauce. Let thet all simmer down and then added some shrimp. Served that up with some fried eggplant sticks.
Next few pics are some all veggie meals here at the house including some eggplant parm made with some homemade tomato sauce.
Mixed in a steak dinner with some grilled asparagus beans and sautéed chanterelle mushrooms.
Going all the way back to the 4th. I smoked a wild pig ham, and between us and some guests ended up with quite the spread including the chopped pork, smokehouse beans, tater salad, slaw, some diller eggs, pasta salad, mac-n-cheese, a myriad of desserts etc.
Included three pics from some meals during our stay in Jackson Hole. An elk chop with some wild mushrooms, lamb ribs with a Moroccon tomato sauce, and a pan sautéed trout with arugula and radish salad.
