Baby Back Ribs 2-1-1?

I cooked two slabs on the Ugly Drum Smoker using the 2-2-1 method. They were way over cooked. My temp was around 250-275 instead of 225-250.

I was reading on a few sites and some people prefer 2-1-1. They feel 2 hours wrapped in foil is too long giving the meat a boiled texture. We do prefer our ribs to fall off the bone but I don't want them to taste like steamed meat either.

One cook uses a 1.5-1.5-.45 method.

I think on the next batch I'll do a 2-1-1 and try to stay at 225-250.
