Best Store Bought Pimento Cheese

Daggum, I haven't had a pimento cheese sandwich in not telling how long. I could eat one now on toast.

How do you make it?what kind of cheese do you start off with?

4 oz colby
4 oz mild cheddar
4 oz diced pimentos
1 tbs Miracle whip
2 tbs Dukes Mayo
just a little pepper.

I also mix in 4 finely chop green stuffed olives

Mix with a spoon, then let sit in a covered bowl in the fridge for 24 hours.

Serve on sliced bread or crackers.

Wish I could try the Palmetto brand its not sold in our area as I know of...Pimento cheese sandwich with a big slice of ham and mayonnaise makes for a good snack, potato chips along with it and a Pepsi..

I forgot to say, you have to use an old box cheese grater and use the julienne slotted side to grate the cheese.

Growing up I thought pimento cheese was the devil. All I had ever tasted was that kraft garbage.
Then at age 43 I went to a fancy Christmas party with my wife where they had hired a chef. I had drank about like Forrest Gump on some Dr Peppers when my wife came back with a homemade pimento finger sandwich. That sucker was so good I had about 30 of them.

If you have never tried homemade, give it a shot.
I do buy the palmetto on occasion and it’s pretty good.
