Alpha gal be danged this was all kinds of good!! Fried up the last catfish filet I thawed out last night. Served that over a yellow squash saffron purée. Basically squash, onion, and garlic sweated down then cooked with some chicken , lemon zest, lemon juice and stock until soft. Added some saffron and then puréed and cooked down some more. Served up with my first fried okra of the season, some just picked garlicky green beans, and a fried squash blossom.
