Grinding deer meat

Do you grind your deer meat fresh and then freeze it? Or, do you freeze the meat first and then thaw and grind the meat as you need it?

I grind mine cold, not froze, normally out of a cooler with ice @ 40 to 45 degrees if I had to guess.

Both, depending on the situation, but more often grind then freeze. You can flatten the vac-seal packs out so that they stack and don't take up much freezer space.

Thanks guys. We decided to start processing our own deer and bought a grinder. We'll probably go ahead and grind what we need once the deer is butchered. A bit more work upfront, but less time spent than cleaning the grinder after each use. A good point about fitting more meat in freezer that way.
