What may I ask,is haricots verts? Been around the world with uncle Sam,attended a heap of state fairs and carnivals,but missed that one.

I think it’s a piece of backstrap with a rib bone left attached , mainly for looks or to hold it by to eat . Maybe hillbilly will explain better if I’m wrong
