I`m just about ready to set a pot to commence to a slow simmer.
Just finished cooking my Duck Gumbo. Emptied the freezer of wood ducks on Friday, cooked them last night and deboned shredded meat, 4 packs of conecuh sausage disc'ed and pan fried and then all the other parts this morning and simmered for 4 hours. Mighty fine over some long grain wild rice with a splash of Louisiana Hot sauce! Wife likes it mild so i don't add hot sauce to the pot.
