Here's the final product. Stepped it up to 350deg for 10 minutes to crust up the exterior a tad, poured some water n the pan to soften the drippins, once the 10 minutes was up, spooned more drippins over the meat and now its resting.
if i can manage to get the little puppy dog wimper sounds out of my head i could probably eat it!
