Durn, y'all just showin' out last night. Dub, I applaud your efforts to make OG-like food that is actually edible. Looks good!

I just made some simple chicken Marsala. It was pretty durn edible.

Been watch'n Y'all's Marsala here lately, granted mine's good but don't look (and I bet taste) NOTHING like what Y'all make'n. Best I can tell..I need to reduce it a WHOLE lot more.

Another April Humpday rolls in.


Tried something new tonight that the tribe really liked:

  • light coating of olive oil in skillet
  • Brussels sprouts with ends chopped off, placed open end down
  • Salt & course pepper
  • Bacon
  • Minced Garlic
  • A few shots of Crystal hot sauce
  • 350 degree oven until the bacon is done
Bottoms of sprouts get carmelized and are mighty tasty.

Shrimp & then some catfish fillets cooked last.









Wife & son each jumped on a kale salad while the rest was cooking. Hit them both with some honey & lime juice on top.
















Only thing I I know I screwed up on was drinking too much iced tea while I was cooking. Strong stuff....gonna be up late tonight. :rofl:

Had some fresh ones on hand and was wanting another way to cook 'em up and did search on the youtubes and quickly found this 'un:









My only regret is that I din't have more of them to cook. Absolutely delicious. For years I've been doing it all wrong....simply slicing them in half without cutting off the base.

From now on...the base comes off first (seems to take out the bitterness).

They were delicious. Her method is spot on....even using minced garlic vs freshly smashed...
