And I think Ive read that the back straps are boneless. Is this true?
This is true, I like to cut the straps into nuggets and fry them. To me, it's very similar to alligator.

Yes. All of the above. Blackened is my favorite way to cook it. And yeah, the backstraps are completely boneless. It's not much like other fish. Kind of like a cross between gator and lobster, texture wise.

My favorite is to fry them up in medalions like scallops, close to the same texture.

I need to! Haven't been anywhere except the private pond in Athens for over a year. Busy at work, and not getting around as well as I used to. Need another new knee.
