The sear on the scallops is perfect. How do you get it? Even after I pat the water out, they never seem to get crispy seared. It’s always more like it was steamed. good! But not crispy

A little spice of some type even if just salt and pepper on one side and that side does down first, a very hot pan that at least starts almost dry (i.e. just a thin veneer of oil at most), and resist the temptation to flip them as long as you can. I'll throw a pat of butter in the pan after they're done and turn down or turn off the heat.
