Did this one a little different and ended up being the best one yet.
Injected (with Meat Church Holy Cow injection mix) and Rubbed with Meat Church Holy Cow.
Smoked 10 hrs or so at 185 degrees. Pulled from grill at 170 internal, placed in pan with beef broth and foiled closed.
170/before pan.
225 til probe tender across the flat.(around 4 more hrs or so).
Rested 3 hours or so in the pan/juices.
Just went fries and macaroni for the sides. Will be making tacos or quesadillas tomorrow and sliders the next.
