Pickled Onions

I have two confessions to make. First, as much as I love to cook and have taken part in some little known, strange, different recipes and methods I have never before pickled anything. Secondly, I'm not a big fan of onions (Except Vidalia) unless they're pickled. Not sure why.

Anyway, I'm on the hunt for a good method/recipe for pickling onions. I figured someone here would have a good one. I've searched for recipes and, yeah, I found some, but I don't entirely trust recipes unless it comes from someone with experience with the outcome and they tell me it's good.

I'm just hoping to apply my own pickled onions to my venison burgers. Something about store bought just...eh...not too crazy about it.
