Smoked fish dip

I've got an unopened bag of cherry chips.I've never used cherry except on mullet.Maybe a blend of apple and cherry?

Pear and apple wood works really good to smoke mullet.

Both of these give a milder flavor that doesn't completely cover up the fish.

I've used it with both salmon and trout. Tinker with it and make it your own. Would probably be good with a splash of hot sauce. I always put in some good spicy mustard too.

I do mine in a hd mixer and just add stuff to adjust it to what I want. The mixer takes care of the salmon.

I like capers but some as don't. LOL

I can attest that this is delicious. I ate a bait of it over the weekend. I made him send me the recipe, if that says anything.
