Fried up some bacon and made a bacon, mater and cheese sandwich. Got enough bacon left over for a breakfast sandwich in the morning. Was edible for sure.

Stopped by the dam on my way home to walk the steps for exercise………….and somehow ended up on the bottom dropping chicken liver in a hole about 8 foot deep………there were a couple stripes in there.

Fried striped bass samich for dessert.

Taco Tuesday here too. I cooked a chili lime chuck roast in the crockpot.

Fried potatoes, sautéed onion and left over steak from last nights taco's

Throwing on the pepper jack and into a 350 oven for 10 or so minutes.

Time to eat. Was edible, not wife approved so good thing she is out of town for her teacher and kids out of school spring break.

Spatchcock chicken with roasted carrots, kohlrabi and golden beets. Salad is arugula, onion, carrot, Parmesan and walnuts roasted with honey and creole seasoning. The veggies and most of the salad components compliments of Windy Hill Farms.

You folks are prolly sick of seeing our Dillas. We started salmon with Asian spices. Then took a hard dilla left turn.

kRoger salsa, chopped onion and Anaheim pepper, avacado salsa, kRoger cilantro lime rice, Monterey Jack, cilantro… man! The green salsa nailed it . Son did the prep work and we tag teamed the cooking

You’re right, it wasn’t exactly spatchcock. Probably should have just went with roast whole chicken.
