I made my first small batch using Leggs #9. I followed directions even though it is marked for 25 lbs.
It was a little dry and not enough sausage taste.
I guess I need to add more seasoning.
I did not add any fat so next time I will run some bacon with it or find some fat scraps!

Kroger runs Boston butts on sale occasionally. Trim the fat off of one an grind it in. Then cook the butt separate.

Our Ingles is really good about supplying beef and pork fat to hunters.
