Reminds me of cooking a opossum.

Skin it, clean it & nail it to a board. Season it & Bake at 350 for an hour or until tender. Throw away the opossum and eat the board. :rofl:





This was a buddies line...he had some cut shad on there.

Aw now, possum is good, if one will just "clean'um" out a bit. Specially with a side of polk salad.:D

Anyone have a recipe for a tenderizer for those????!!!!

It's all about tool choice. Some guys prefer a strongly acidic marinade like orange juice, I like to flatten them out so they cool faster so I use one of these.

A lot of guys complain about the work it takes to get one ready for the grill, but the backstraps are totally worth it. Especially if you smoke them. Make sure you prep it right, or they can explode on the grill. :hair:
