Reminds me of cooking a opossum.
Skin it, clean it & nail it to a board. Season it & Bake at 350 for an hour or until tender. Throw away the opossum and eat the board.
This was a buddies line...he had some cut shad on there.
I guess because he can?
Aw now, possum is good, if one will just "clean'um" out a bit. Specially with a side of polk salad.
