Jerky brine?

Do you have one you like if you're going to turn the breast into jerky??

I've found a good marinade can also act as a brine. For straight off the shelf I really like Soy Vay Veri Veri Teriyaki. I've used it on goose and on venison. I do not like any strong gamey flavors so I typically let it marinate 24-48 hours in a ziploc bag in the fridge. I'll shake it up and stir the meat around in the bag every once in a while.

I also make my own with soy sauce, Worcestershire, garlic powder, onion powder, red pepper flakes, honey, liquid smoke and cayenne powder & black pepper to taste. Bringing it up to a simmer on the stove first really helps it to mix well. Once that cools, let it marinate the meat for 24-48 hours. Good stuff and you can make it more sweet/spicy/savory as you like.
