if you can cook your rice the day before it turns out better.....and use sesame oil to fry if you can....
If you can't cook it ahead of time, spread the rice on a baking pan and stick it in the freezer for 30-45 minutes.
Or butter, until it turns white and opaque.Toasting the dry rice in hot oil before steaming achieves the same effect; no mushy, clumpy rice.
