Battered onions dredged in Panko before they hit the grease.
1.5 cups all purpose flour
1 tsp baking powder
1 egg
3/4 cup half and half or buttermilk
crushed red pepper, garlic powder and salt to taste
Dip your rings in the batter and coat them and then dredge them through the Panko. Set on a wire rack for 15 minutes to let the batter set. Fry 'em up around 300 or so.
You can adjust the milk to get your batter liquid enough so that the onion holds it but it doesn't completely drip off. I use a little water if the batter is too thick.
