The single fly listed “Dec” is an Elk hair Caddis and is very good in March and April, that’s when they seem to be around the most either hatching or laying eggs- but it’s also a good attractor dry flies through the warmer months.

Your terrestrials ( Beatles, ants, grasshoppers) will be best during the summer time.

Any of the subsurface flies can be fished all year.
I feel like a brown EHC has that food pellet quality to it as well.

Which restaurant?

I finally remembered to ask my aunt, and the restaurant is Twisted Spoke. I don't know when they bought it from previous owners - maybe in 2023 Summer. I haven't ate there yet. My boy and I are planning on fishing that area in 2024. We will stop in and give it a try. My uncle (owner now) used to take me to rock concerts when I was in grade school. The cool uncle. LOL
