This year we tried water bathing green tomatoes. After researching - all you need is water since tomatoes are acidic. These lost no flavor or texture at all. Frozen ones lost a little texture no matter how we prepared them.

Few fried radishes, too.

My aunt does some like that, pretty good.

I egg wash, then dredge, then put in the freezer for a little bit to fry

Makes a good green mater pie too, neighbor used to make me one every Christmas before she passed away.
