My aunt does some like that, pretty good.This year we tried water bathing green tomatoes. After researching - all you need is water since tomatoes are acidic. These lost no flavor or texture at all. Frozen ones lost a little texture no matter how we prepared them.

Makes a good green mater pie too, neighbor used to make me one every Christmas before she passed away.I may have to try that, never thought of it.
