Smokin on the ugly drum

Fired up the ugly drum and smoked a butt and a brisket, used cherry and pecan wood. Wrapped both in butcher paper, this was the first time I’ve used butcher paper and it turned out great. Also threw on some cream cheese seasoned with bbq rub and smoked. It was all fantastic!!

Smoked cream cheese!!!! What do you do with it?
Are you sitting down??

First we spread it on some street taco sized corn tortillas and then put the brisket and pork on it for tacos.

This morning I put it on my sausage egg and cheese biscuit

Next I’m gonna put some pepper jelly on it and eat it with pita chips, crackers or fritos scoops

Then my buddy also made some stuffed poblano peppers: halved peppers, fill with cream cheese, lay a piece of the brisket on, wrap in bacon and grill it.

Sorry no pictures it was eaten too fast!!

What's the deal with the butcher paper? I guess I've never heard of that before.

Man all of it looks great! I've been wanting to do some cream cheese myself. What was the temp for the cream cheese?
