My cousin brought me a brisket and wanted me to smoke it for church dinner on the grounds tomorrow. Hopefully I can pull it off. Got it rubbed down with my Classic Brisket Rub and on the smoke. It’s looking good.
I learned a while back that the weather (atmospheric pressure and humidity) have a LOT to do with how fast any piece of meat on a smoker cooks.That brisket got done way sooner than I was expecting.

Yours looks awesome. Sorry it was dry. I cook a flat about 1/2 as long as a whole and TX crutch it after about 2 hrs using a water bath smoker.
