Thursday Catch and Cook

Spent part of today on the Tennessee River before the wind got too much to take and the rain moved in. Tonight….. blackened spotted bass filets. Served that over some flash fried mustard greens and a risotto that would have made corn maque choux without the rice and risotto finish. Topped with some magnolia sauce made with actual cream which until recently I sorely missed! Need to get some corn meal out of the frier…….

I just gotta know … where did you come up with something like that ? Looks amazing and I know it tasted the same

Sometimes I have something specific in mind and will make sure we have everything in stock before hand. Sometimes and more often it is a kind of figure out something with what you've got and/or need to get rid of kind of approach. I wanted to bring some spots home from that trip so knew that was going to be part of something that evening. Got home before I thought I would do to the crazy wind and waves that day otherwise wouldn't have done the risotto. Had a bunch of fresh mustard in the fridge I got from the garden the day before and an ear of corn that needed to be used. I make corn maque choux all the time and get a little tired of it so thought the risotto would be a good spin on that but something a little different. The normal prep for mustard greens really doesn't go with fish but I love flash fried arugula and spinach so thought I'd go with that since it takes virtually no prep other than turning on the fryer. Had never prepared it that before but definitely will again. Went great with the risotto and fish. That sauce I make with fish all the time and is quick, simple, only 4-5 ingredients and doggone good. Don't measure anything, just put in the pot and simmer for a few. Appreciate the kind words!
