The wife pulled some backstrap steaks out of the freezer; I seasoned them with salt, pepper, and garlic. Then in a hot cast iron skillet with olive oil and seared each side for 2 and 1/2 minutes. Turned the heat down and threw in half a stick of butter and 4-5 crushed cloves of garlic and butter basted until the inside temp was 125 degrees and let rest. The wife made sautéed green beans, cheesey mashed potatoes, and sautéed onions and mushrooms. I had some bourbon glaze to the top of mine, We’re stuffed!!
