We were back at it this weekend. Finally got some decent weather to try out our new 31T. That boat is amazing. Fishing was spot on. The trout were in 2-3ft water chasing shrimp.

Don't see many folks keep AJs. Fun to catch, but not so great to eat.

Never liked the taste of AJ’s no matter how it was cooked, they are a blast to catch though!

I fillet mine then cut at the red out then cut the fillets sideways so don’t have that thick fillet. Blacken in a cast iron skillet is great.

A restaurant along 30A near Grayton Beach used to have a lunch special and one of the choices was a grilled amberjack sandwich. I had it several times. Quite tasty.

I love everything about amber jack.

They hit like a freight train and go straight to Davey Jones Locker everytime.

They are delicious every way that I've ever cooked them (for 20+ yrs).

Yup, the lateral line has to go. It will ruin the rest of the meat when you cook it.
