Just wasn't wanting the traditional NYE fare. Last night I threw a quarter of a buck neck in the slow cooker with some guajillo and ancho chiles, garlic, and cumin. Shredded it this morning. Mixed up a bowl of Cilantro and Lime Sauce for dipping.
Browned about a cup of rice in some bacon grease and added chicken stock, garlic, tomato paste, onion, and cumin. Gave the neck meat a sear and cooked that in some flour tortillas browned up in lard.
Also made up a tequila sunrise, but instead of grenadine I used muscadine syrup from musadines from the farm. Pretty satisfied with the whole endeavor.
