Do y’all buy gas if the fuel truck is refilling store tanks?

Try not to, don’t like getting gas when it’s raining hard either. I’ve been around a few tanks that were dug up, lots of gas fumes in the dirt surrounding two of those tanks. Old buried tanks are bound to have sludge and debris in them, I think diesel tanks can even have algae.

I have done so with no ill effects with my truck but I don't make it a habit to do so.

There should also be filters on each individual pump hose that separate water as well.

Once again you are relying on humans actually doing a job when it comes to changing them and doing the plethora of other maintenance that needs to be done at fuel stations.
