I think it looks great. Usually There is enough Fat on the outside To absorb A good char.
Exactly. I cooked is super low for about 3 1/2hrs then I pulled it and poured the coals to it. The fire was over 1000 degrees. White oak finished almost with a honey taste. The crust was very sweet despite only using course kosher salt and cracked pepper
