Cured about 12 lbs of bacon over the last couple weeks. Wouldn’t you know smoke time would come on the coldest day of year. On top of that, the electric smoker decided to go on strike. I usually use the electric for bacon instead of the egg just because it will all fit and I can get it done in one run. Oh well just one more reason fire > electricity. Turned out pretty dang good.
