Been overwhelmed with cucumbers, okra, tomatoes and tomatillos out of the garden recently. A few squash and eggplant still producing too.
Ground pork burger seasoned with cumin and chili powder, with some homemade pickles, a lime-cilantro mayo, pickled red onions, and some tomatillo salsa.
Turkey burger with fried green maters and okra.
Some okra creole served over rice. I can go vegetarian every now and then with that kind of dish.
A grilled pork chop with some ratatouille (yellow squash, zucchini, eggplant, onions and basil quickly sautéed), some eggplant slices, and a tomato-olive sauce.
One of my favorite summertime meals some might think a little strange, a shrimp-cucumber soup. Sounds like a weird combo, but the end result is a very savory creamy soup that it would be hard to determine the cucumbers are such a heavy ingredient. Sweated down some onions, garlic, and cucumbers in a little butter, added some chopped shrimp and dill. Then simmered in some chicken stock for a while and then added some heavy cream. Then put it all in the blender.
A little blueberry cobbler and vanilla ice cream.
