Pickled Eggs

Been a long time since I made any, but decided it was time. Rounded up all the ingredient's eggs boiled and peeled

Cooked the pickling stew, I did it on the Blackstone, didn't want to stink up the house..

Loaded 24 eggs in the mason jar and poured in the juice.

I left them to soak for 2 weeks and could not wait any longer, so I pulled on out to try.

Not bad at all but still a little weak, so I will wait a month and try again..I have been turning the jar once a day. Time will tell

We use beet, pickle or hot sausage juice, add a little extra vinegar and sugar, sometimes pickling spice

Useles Billy’s Uncle StepDaddy.
Mine is simple, all vinegar, no water and beets. Those Aunt Mini's sweet pickled beets are da bomb by themselves.

My problem is they start disappearing after about 4 days slowly but surly.

Well I'm going to have to make some today I reckon. Headed to the store shortly anyway I'll get what I don't have on hand.

Thanks for the inspiration.

Here's mine, kosher dill pickle juice, a little white vinegar and pickling spice.

Next is pickled beet juice, a little sugar, some vinegar and pickling spice.

Here they are, couldn't wait no longer. Purple ones are on point, pickle juice needs a couple more days, good, but could be better
