Spent the last week up at Standing Indian campground. Sure was nice to have daytime highs in the 70s when everything down the mountain is melting.
Kicked things off big Saturday night with a low country boil for about 70 folks, but sadly, no pics. You can just imagine....
Gave the Weber a workout and the harrow disc too.
Cooked bacon and country ham every morning for breakfast on the harrow disc. Here's some country ham from the hog we butchered last Christmas.
Tried some beer can burgers one night. Since it was a church camping trip and I used a diet Mtn Dew can, I can't really call it beer can burgers. How does Bacon Burger Bomb sound? It's the first time I've ever tried them. With just a tweak or two, these could be unbelievable.
Sauteed onions and peppers on the disc.
Stuffed the burgers with baked beans and then peppers and onions. Wrapped in bacon and sprinkled with my own secret rub.
Put them on the grill for indirect heat for about 45 minutes.
After a bit, they look almost done...
Add some 4 cheese Mexican blend and let it melt... now they're done. Mmmmmmmmmmmmmmmmmmm
Can't fire up the grill so much and not do some ribs too. Ribs courtesy of the hog we butchered. Pork chops courtesy of some other hog.
Then last night, I thought I would take it easy with a couple of center sliced hams.
Believe it or not, I didn't gain a single pound after 5 days of this. Cooking is hard work!
