I really like to fry eggs in. The only problem with it is that if I want one over easy that it well done by the time that I get through chasing it around the pan to flip it!! It is way better than any Teflon non stick pan I have ever tried to use!!!!!
Try getting the yolk as far to one side of the whites as possible and then flip just the whites over the yolk. Kinda taco style. Makes it easier to flip but not a good presentation....lol

I have several cast skillets but I recently acquired an enameled Dutch oven.
It is without doubt the best chili, pot roast, Marsala chicken pan ever made.
It cooks on medium heat as evenly as you could ask. And every meal turns out special.
I am 66 and I don’t know why I never learned this.
I may never use a slow cooker again.

I am a cast iron addict. I have an unreasonable bunch of it, from newer Lodge stuff to fourth-generation family cast iron. I also have a sacred cornbread skillet that's probably over a hundred years old. There are very few days in my life when I don't use some sort of cast iron.
