Anybody Making Muscadine Wine?

Been wanting to try my hand at some Muscadine wine...anyone have a delicious, staight-forward recipe? Almost every one I have found on-line has some silly directions/jargon that seems difficult to follow. Any help out there? In the mean-time, I will keep searching. Thanks!!

Dad’s Homemade Wine Recipe

Ingredients:

1 ½ Qts. Fruit per gallon of water or 8 lbs. Fruit per 5 gallons of water
10 lbs. sugar per 5 gallons of water
2 pkg. of yeast per 5 gallons of water

Directions:

Fill 5 gallon container ½ full with warm water, then add sugar to dissolve.
In a separate container, dissolve yeast in cool water, then add to 5 gallon container.
Stir mixture, then add fruit.
Add water until the container is full, and stir again.
Install 1 12” party balloon with the bottom ring removed onto the mouth of the bottle.
Put a rubber band around the balloon and mouth of the bottle.
Put a tube into the neck of the balloon, and put the other end into a jar ½ filled with water.
After the yeast starts working, the gas will be displaced into the jar.
This will continue until the gas stops (3 months +).
Working time depends on temperature.
Once finished fermenting, remove the fruit from the container.
Seal the container with the balloon, and let stand until clear.
Once clear, filter into smaller bottles.

Thanks for the receipe...I have a few gallons brewing. Real clear, need to sweeten and bottle. It has been a fun project. Pretty tasty as well. Just could not let a great crop of muscadines go unused this year!

I used 5 gallons buckets with lids. The lids had a barb fitting screwed in and a tube running in to a bottle of water. The air must be kept out during the process. You can determine when the process is finished when the bubbles stop. Be sure the bottles you use are pressure rated, not mason jars. I keep the bronze separated from the black. I used 2 litre coke bottles for beer.
