I did have the temp probe on the grate. Thank you all for the helpful info.

Just make sure if you are smoking it's over the leg, not directly over the coals...also most probes will die over 450-500* of exposure to direct flame...I find it stupid but most are not high temp thermocouples...

I had it towards the back in center so that would be over the back leg.
